Some businesses are built on a business plan. Others are built on a moment. For Daniel Elliott, owner, sommelier, and executive chef of Vinicola Wine Bar and Bottle Shop, that moment happened twenty-five years ago around a family table in La Rioja, Spain.
Daniel was a college student living in Madrid, sharing an apartment with friends from around the world, when a roommate from Logroño, the capital of Rioja wine country, invited him home for the weekend. One evening, surrounded by family, laughter, and endless small plates, someone uncorked an unlabeled bottle of red wine. Daniel took a sip. It was unlike anything he had ever tasted: pure, alive, soulful. That bottle planted a seed that would take twenty-five years to fully bloom.
Life moved forward. Daniel built a career, got married, and then the world changed. When the COVID-19 pandemic hit and he was laid off, he chose to see it not as a setback but as an invitation to ask a better question: what do I really want to do with my life? He and his wife Lauren moved to the country. He began working in the wine industry, from retail to private tastings to hands-on work in nearby vineyards. He earned his WSET Level 3 sommelier certification and launched Discerning Sommelier, a wine services business built around connecting people to bottles and experiences they would never forget. Every step was leading somewhere.
That somewhere is Vinicola Wine Bar and Bottle Shop at 205A East Main Street in Front Royal, Virginia. Opened in October 2024 and co-owned with Lauren, Vinicola is Daniel's love letter to that backyard bottle in Logroño, and to everything it represented. Connection. Community. The wine program at Vinicola is built on a clear philosophy: champion Virginia wines, small producers, women winemakers, and family-run operations. Every selection is intentional. Every pour has a story. And Daniel brings to the glass not just the credentials of a certified sommelier but the instincts of someone who fell in love with wine the way most people do: unexpectedly, around a table, with people he cared about.
The food is equally thoughtful. As executive chef, Daniel draws on his time in Spain and his Brazilian heritage to create a tapas-style menu of shareable small plates designed to move with the wine. Signature items include Gambas al Ajillo, Brazilian Coxinha chicken croquetas, Pao de Queijo cheese bread, imported Jamon Serrano, and Manchego cheese boards. The menu changes with the seasons and the story.
Weekly programming at Vinicola deepens the experience. Wine Wisdom Wednesdays bring an intimate guided tasting built around a single theme, a region, a grape, a question worth asking, with four curated pours and the chance to keep exploring at a discount for the rest of the evening. Fondue Night on Thursdays brings a different kind of warmth to the table. Friday Fish Dinners and monthly fine dining ticketed tasting menus round out a calendar that gives guests a reason to come back every week.
